Finnish Brita Cake

Brita cake is a delicious Finnish cake that literally melts in your mouth. It is made of three parts: cake base, meringue, and filling.

Cake:
125 g margarine
0,75 dl sugar
1 tsp vanilla sugar or a drop of vanilla extract
3 Egg yolk (just the yolks)
5½ dl gluten-free flour (I used oat flour but other gluten-free flours work as well)
2 tsp baking powder
(5 tsp cocoa powder if you want a brown cake base)
1 dl milk

Meringue:
3 egg whites
5½ dl sugar

Filling:
2 dl whipped cream
100 g vanilla-flavored cream cheese
100 g quark
1 tsp vanilla sugar or a drop of vanilla extract
Berries of your choice
Some chocolate chunks if you wish

Mix the melted margarine and the sugar until the foam is white. Add the egg yokes. Then add the dry ingredients of the cake and milk.
Prepare the meringue and squeeze it on top of the cake before putting it on the Owen.
Bake in 175 degrees for 25 minutes.
Prepare whipped cream and add other ingredients of the filling. Cut the cake in half and spread the filling on top of the first half. Lay the other half on top. Decorate as you wish.
